  • 2 Green Chilis (fresh, minced, optional)
  • 4 Red Onions (small, diced)
  • 400 g Crushed Tomatoes
  • 2 tbsp Coriander Powder
  • 1 tbsp Turmeric Powder
  • 1.5 tsp Sea Salt
  • 300 g Frozen Spinach (thawed)
  • 250 ml Oat Cream
  • ¼ Red Bell Pepper (diced)

Instructions
 

Step 1: Prepare the Tofu

  • Cut the tofu into bite-size pieces and set aside. Heat 1 tablespoon of sunflower oil in a pan over medium heat. Once the oil is hot, add the tofu pieces and fry them until they are golden brown. Remove the tofu from the pan and set it aside.

Step 2: Sauté the Ginger and Green Chilies

  • In a different pan, add a tablespoon of sunflower oil over medium heat. Once the oil is hot, add 2 tablespoons of minced ginger and 2 minced green chilies (if using) to the pan. Sauté the mixture for about 1 minute until fragrant.

Step 3: Add the Onions

  • Add 4 diced red onions to the pan and continue to sauté for 2-3 minutes until the onions are translucent and soft.

Step 4: Add the Tomatoes and Spices

  • Add 400g of crushed tomatoes to the pan, along with 2 tablespoons of coriander powder, 1 tablespoon of turmeric powder, and 1.5 teaspoons of sea salt. Stir the mixture and cook for about 5-6 minutes on high heat, stirring continuously.

Step 5: Mix in the Spinach, Cream, and Bell Pepper

  • Add 300g of thawed frozen spinach, 250 ml of oat cream, and ¼ diced red bell pepper to the pan. Mix everything together and continue cooking for another 5-6 minutes.

Step 6: Add the Tofu and Serve

  • Finally, add the fried tofu to the pan and stir to cover it with the sauce. Cook for another 2 minutes to allow the tofu to absorb the flavors of the sauce. Serve hot with your favorite rice or bread.
