Pumpkin Soup

Pumpkin soup is definitely one of my favorite meals to have in the cold months. This is a ray of hope in this weather. I cannot express how well this soup works if you are looking to warm your soul.

Pumpkin Soup

Everyone's favorite meal to enjoy in the colder months. This thick and creamy vegan pumpkin soup is like a big hug for the stomach and will fill your soul with happiness. Thic can be easily made with a Magimix Cook Expert.

Ingredients
 
 

Base

  • 1 kg Hokaidu pumpkin cut into blocks
  • 3 cloves Garlic peeled
  • 6 tbsp Olive oil extra vrgin
  • ½ tsp Sea salt

Spices

  • 1 tbsp Dill fresh or dried
  • ½ tsp Ginger powder
  • ½ tsp Garam masala
  • ½ tsp Black pepper milled

Cook

  • 2 tbsp Balsamic vinegar
  • 2 cups Coconut milk full fat
  • 1 cup Water

Garnish

  • 2 tbsp Pumpkin seed oil
  • Pumpkin seeds to garnish

Instructions
 

  • Preheat the oven to 220°c with the fan on. Place the pumpkin blocks and garlic into the oven sheet, pour the olive oil and spices on top making sure to cover all the sides.
    1 kg Hokaidu pumpkin, 3 cloves Garlic, 6 tbsp Olive oil, 1/2 tsp Sea salt, 1 tbsp Dill, 1/2 tsp Ginger powder, 1/2 tsp Garam masala, 1/2 tsp Black pepper
  • Bake for 15-18 minutes. Check with the knife that the slices are soft. Take out of the oven and empty everything into the cook expert bowl.
  • Add water, coconut milk and balsamic vinegar to the bowl.
    2 cups Coconut milk, 1 cup Water, 2 tbsp Balsamic vinegar

Program: Cream Soup

  • Run with the lid on for 15 minutes at 120°c. Stop midway to scrape down the soup from the sides of the bowl before continuing.
  • Garnish with some pumpkin seeds and dress with pumpkin seed oil.
