Here’s an interesting fact about sweet potatoes: they aren’t actually potatoes! In fact, they are a naturally sweet root. The most common type of sweet potato is the ‘Covington’ variety, which I am using in this recipe. This variety has a bright orange flesh and a pink, purplish skin. Nevertheless, there exist many other varieties of sweet potatoes in many different colors! White, red, purple… they have an impressive variety of colors! You can, of course, make this roasted sweet potato recipe with another variety of sweet potatoes.

Are sweet potatoes healthy?

Sweet potatoes are really healthy – they aren’t called a superfood for nothing! Sweet potatoes have a lot of beta carotene, which is a very strong antioxidant and an abundant source of vitamin A. Talking about vitamins, sweet potatoes are also rich in vitamins B, C and D. But the health benefits of sweet potatoes don’t stop here! This sweet root is also a great source of zinc, calcium, iron, phosphorus, thiamin, magnesium and potassium. Pretty impressive, right?

Sweet potatoes have also been said to help with numerous health issues. Some of these issues are obesity, lowering your ‘bad’ cholesterol and thus helping avoid heart disease, cancer and blood sugar control. All in all, sweet potatoes are a great healthy and low-calorie veggie!

Almonds are very rich in nutrients. While they are fat-rich, most of it is monounsaturated fats, which are beneficial to protect against heart disease. Those are the ‘good’ fats which fight the ‘bad’ cholesterol. Moreover, almonds are also rich in minerals, antioxidants and vitamins.

You’ll be glad to hear that sunflower seeds are also super healthy! Just like almonds, they help to protect against heart disease and help support your immune system, thanks to its many vitamins and minerals. Indeed, sunflower seeds are an amazing source of vitamin E, B1, B6, iron, zinc, manganese, copper and selenium. With so many benefits, it’s no wonder people love adding them to various meals!

As you can see, almonds and sunflower seeds have quite a few health benefits! Toasted nuts and seeds are super delicious too. I find that, in this recipe, they add a really nice crunch in contrast with the creamy potatoes!

Can I eat sweet potato skin?

Yes, sweet potato skin is edible and actually pretty healthy. Sweet potato skins contain a lot of fiber and antioxidants, which are great for gut health! For this recipe though, I opted to peel my sweet potatoes and roast them without their skins. Nevertheless, you can always keep the skin on and eat it. If you decide to do so, make sure your potatoes are well washed and clean of any dirt. Then simply proceed with the recipe as normal.

Should I par boil my sweet potatoes before roasting?

No, there is no need to par boil your sweet potatoes before roasting them. In fact, boiling them before could make them a bit watery and mushy after roasting them in the oven. You can thus completely ignore and skip this step!

Recipe for roasted sweet potatoes in oven

Making these roasted sweet potatoes couldn’t be any easier! Ready in about 40 minutes, you’ll end up with delicious creamy and crispy potatoes, full of flavor. Here’s how to make them!

Start off by preheating your oven to 200°C (or 400°F for our American friends). While it’s preheating, chop up your sweet potatoes in 1 inch cubes. You can use the picture for size reference. Once they’re chopped, toss your potatoes in the olive oil and then add the almonds, sunflower seeds and all the spices. Mix well and place them on your baking tray. When your oven is hot, put them in and bake them for about 25 or 30 minutes. Every 10 minutes, quickly get the tray out of the oven to toss the potatoes around. By doing so, you’ll ensure that they are evenly cooked and browned, and that your almonds and sunflower seeds won’t burn. Once your potatoes are golden brown, remove them from the oven. Serve them warm and enjoy!

Ingredients
  

  • 6-8 tbsp olive oil
  • 600 g sweet potatoes big
  • ¼ cup almonds
  • ¼ cup sunflower seeds
  • 2 tbsp coriander powder
  • 1 tbsp cumin powder
  • ½ tsp fennel powder
  • ½ tbsp black pepper
  • ¼ tsp nutmeg powder
  • 1 pinch cinnamon powder
  • 1 tbsp sea salt

Instructions
 

  • Preheat your oven to 200°c.
  • Cut the sweet potatoes into little pieces as shown (about 1 inch cubes). Cover the sweet potatoes in the olive along with the rest of the ingredients and mix well.
    600 g sweet potatoes, 6-8 tbsp olive oil
  • Place in a baking tray. Bake for 25 – 30 minutes. Make sure to remove the tray from the oven every 10 minutes, stir and place back into the oven.
    1/4 cup almonds, 1/4 cup sunflower seeds, 2 tbsp coriander powder, 1 tbsp cumin powder, 1/2 tsp fennel powder, 1/2 tbsp black pepper, 1/4 tsp nutmeg powder, 1 pinch cinnamon powder, 1 tbsp sea salt
  • Remove from the baking tray immediately after the potatoes look golden brown. Serve warm!
