Tropical-style Vegan Granola Recipe

My usual go-to breakfast is a bowl of oatmeal – it’s filling, warming, nutritious, and delicious. Nevertheless, as the days are getting longer and temperatures warmer, the need for a warm breakfast dissipates. Oats are a great breakfast food though, and other than oatmeal (or porridge, however you call it), you can make tons of different breakfast items with them! One of the easiest ones is homemade vegan granola. This recipe for vegan granola was inspired by the arrival of sunny days – mangos are the ultimate summer fruit! So for a delicious and summery breakfast, let us indulge on my tropical granola recipe!

How to make vegan granola?

Making vegan granola is much simpler than you may think. But, what ingredients usually go in granola? The classic ingredients that you can find in almost any granola are oats, nuts, and some kind of sweetener. Unfortunately for vegans, a popular sweetener often used in granola is honey. Therefore, if buying commercial granola, make sure to check the ingredients to see if they are vegan-friendly!

Making granola at home is very easy though. Once you know how to, you will never want to buy granola from the store again! Making granola at home is easy, quick and cheaper than store-bought granola. Moreover, you can adapt the granola to your taste and put only ingredients you love! In my opinion, that’s the best part about making granola at home: with each recipe, you can try some new combinations and flavours. Lastly, by making your granola yourself, you’re making sure that it’s 100% vegan!

How to eat tropical granola?

Just like with normal (or plain) granola, this vegan tropical granola recipe can be eaten in a myriad of ways! Today, as you can see in the photo, I ate my granola with some vegan yogurt, flaxseeds, cacao nibs, almond butter and pear. Combining the granola with more nuts and seeds (here, the flaxseeds and almond butter), and fruit makes for a really hearty and fresh breakfast.

Vegan granola recipe – tropical style!

This tropical granola recipe is good for 8 – 10 portions. It's vegan, gluten free and made with natural sugars only! I'd love for you to try it out and let me know what you think of it!

Ingredients
  

  • 500 g oat flakes
  • 6 tbsp molten coconut oil
  • 8 tbsp date syrup
  • 75 g dehydrated mango
  • 40 g sunflower seeds
  • 40 g almonds

Instructions
 

  • Preheat the oven to 200°c. Line a baking tray with baking paper.
  • Chop the dehydrated mango into little pieces (about 1cm long pieces). Separately, chop the almonds as well (you can make them as big or small as you’d like).

  • Mix the oats, coconut oil, date syrup, sunflower seeds and almonds together in a bowl. Then spread it evenly on the baking sheet.
    500 g oat flakes, 6 tbsp molten coconut oil, 8 tbsp date syrup, 40 g sunflower seeds, 40 g almonds
  • Bake for 8 minutes, then take it out, stir it with a spoon and spread evenly again. This time add the mango pieces in as well. Now bake for another 6 – 8 minutes until the oats are golden brown.

  • Take it out and allow to cool completely. It’s best if you stir the granola after small intervals. This makes it cool down and become nice and crunchy.

Notes

You can store it for up to 2 weeks. Unfortunately, I already need to make a new batch since mine was gone in 5 days!
